Crispy cheese covered eggs w/ Cabbage, parsley and tomato salad

Kinda a ‘2 for 1’ deal as this combo is just amazing – and so easy to prepare – additional serving suggestions included, of course!

Here You go:

Eggs:

One of the tastiest ways to cook some eggs really fast!
What you need:
  • Your usual number of eggs
  • One generous slice of cheese for every egg
  • Salt and pepper to taste
  • Butter for the pan
Get the pan up to medium/hot and let the butter melt, as soon as it stops sizzling, crack the eggs into the pan. Now season to your taste and cover each egg with a slice of cheese. This ‘glues’ the cheese on top of the egg so the trick is to not wait adding the cheese!
Flip the eggs when half ready so the cheese gets fried crispy, once ready flip them on to a plate, cheese up, and serve with your favorite side!

Salad:

Fresh and simple salad that goes as well with a steak from the grill as with eggs, grilled Halloumi cheese or anything else you would eat with a salad!
What you need:
  • Cabbage
  • Fresh parsley
  • Tomatoes
  • Vinegar
  • Olive oil
  • Salt and pepper

Shred the cabbage (or cut it really finely), chop up the parsley and slice the tomato in thin slices. Mix everything in a bowl and add oil, vinegar, salt and pepper to taste – done!

Give it a try and let me know what You think, ok?

Peace // Claes
