So many people struggle to get enough offal in their diets, and even I, who actually likes liver cooked the right way, don’t eat it nearly as often as I’d like.
Last time I brought home some meat from my friends who raise grass-fed and finished cattle, I throw a whole piece of liver weighing 800g (just over 1.5lbs) in the freezer.
Just a tad too much to down at one serving 😉 so I decided to mix it with ground beef and here’s the result:

What I used:

– 2kg (4lbs) ground beef
– 800g (1.5lbs) liver
– 2 large onions
– seasoning to taste (black pepper, salt, onion powder, garlic powder, smoked paprika, oregano, rosemary)

Cut the liver and onions into pieces and run them through a mixer together with the seasoning until the mixture starts to be smooth and without any large pieces left.
Transfer the mixture to a bowl and blend well with the ground beef using Your hands.

I used about half of the mixture for the meatloaf, covering it with bacon rashers before cooking at about 180C (350F) for 60min in the middle of the oven. Cooking time varies with the size and thickness so start checking after 45min.
The other half was formed into hamburger patties and fried in ghee, just as delicious 😀

Use the drippings from both pans, sieve it into a pot and pour in some heavy cream to make a quick and easy sauce that tastes absolutely fantabulous!
