This is one of my absolute favorites, delicious, fast and easy to make. Best part is that we can cook it in bulk and then have easy accessible and incredibly healthy “fast food” sitting in the fridge for days to come!

What You need:

  • 2-2.5kg (44-5lbs) chuck roast
  • seasoning (here I use pink Himalayan salt, coarse black pepper, smoked paprika powder and sugar free hot sauce)

 

 

Just place the chunk of meat in the CrockPot and sprinkle a generous amount of seasoning on top, close the lid, turn on low temperature and put the timer on 9-12h depending on size and quality of the meat and the chewiness You´re looking for.

Now You can forget about the meat for the time being, go about Your life, work, hang out with friends or disappear on a day hike. The CrockPot does the trick from here and keeps the food warm should You be “late” for dinner.

Back from work, adventures or both – grab two forks and pull the fibers of the meat apart, this should be really easy by now. Really separate the individual fibers from each other and let them soak up the juices from cooking. This renders You a soft and tender meat You rarely find.

 

 

Serve with a tossed sallad or some nice non-starchy veggies like:

  • Cauliflower rice
  • Cauliflower mash
  • Roasted Broccoli
  • Roasted mixed veggies

And, just make a large batch of the veggies as well and You have perfect left overs for the upcoming days. Grab some ovenware of fitting size, throw some of the left over veggies in and cover with a portion of pulled beef. Slab some butter or lard on top and broil in the oven for 10-15 minutes or until thoroughly heated. Delicious fast food that doesn´t even require Your attention cooking it!
